Once considered primarily a spring vegetable, today asparagus can be found just about all year long. When it goes on sale at my local store I pounce; buying several pounds at once and gobbling them down, meal after meal. My favorite asparagus preparation also happens to be very healthy – healthy and favorite don’t often go together in my book. Yes, it’s true. I’ve skipped the butter and egg yolks and instead of drowning this mild veggie in a thick, luscious hollandaise sauce, I grill it.
Three ingredients, not including salt and pepper. Three ingredients later and you too can enjoy fabulous grilled asparagus. All you need is asparagus, olive oil and garlic.
I mince the garlic and mix it with a tablespoon of olive oil per pound of asparagus. Then, roll the washed and trimmed spears in the olive oil and garlic mixture and grill them until they are tender crisp. Add salt and pepper and voila, you’re done!
Grilled asparagus is great eaten warm, but it also is stunning when chilled. Try it today!
