Grapefruit Season

SaladAs readers of this blog will know, I live in Texas. One of the nice things about living in TX is that every late fall into early winter, the local citrus crop comes in. Even though I’m not a big fruit eater, one of the fruits I do love is Ruby Red Grapefruit and there is little better than fresh, sweet and juicy grapefruit. Following is a recipe that I created in order to showcase the bounty of grapefruit.

Citrus Salad with Mixed Greens

4 cups washed mixed greens
2 large ruby red grapefruits, cut into supremes
1/2 cup pomegranate seeds
1/4 cup chopped toasted walnuts
1/2 cup diced cooked beets
2 green onions, sliced on the diagonal

Arrange the greens on your plate and top with the seeds, grapefruit, beets, walnuts and sprinkle with green onion. Then prepare the vinaigrette as follows:

1/4 cup olive oil
2 tbsp pomegranate juice (just squeeze some of those guys until you’ve got juice)
2 tbsp grapefruit juice
2 tbsp lime juice (must have this acidity!)
pinch of salt and freshly ground white pepper

Combine the fruit juices and slowly add the olive oil into the juices in a slow drizzle, whisking as you go to emulsify the ingredients. Add salt and pepper. A dash of cayenne would be good too. Taste and make sure the acidity is to your liking. Adjust if needed.

Drizzle the salad with the dressing and voila! This truly was yummy.
